umpkins are not just to to be carved for Halloween but they also perfect to prepare several, amazing recipes. Here there is one particularly good.
The recipe we are going to describe is the Thai pumpkin soup. It requires 10 minutes to be prepared, 15 minutes to be cooked and serves 4 people. Ingredients: 1 tablespoon vegetable oil, 500gr peeled and diced pumpkin, 500ml chicken stock, 350ml coconut milk, 15g butter, some basil leaves, 1 tablespoon chopped lemon grass, 1 clove garlic, 1 big onion, 2 chilli peppers.
To cook this delicious dish, you need a large saucepan and a wood spoon to stir. Put the vegetable oil and heat it. After about 1 minute, add butter but over low heat. Chop the clove garlic, the onion (you can use shallots if you prefer), chop the chillies and the lemon grass and add to oil and butter. Don't burn the garlic; when it is fragrant you can through it away because you just need it for the aroma. At this point you need to stir in the chicken stock (cubes or jelly), the coconut milk and the chopped pumpkin. Bring to boil and cook for about 15 minutes or until the pumpkin is cooked and soft.
Put everything in a blender and blend until the soup becomes a smooth cream and garnish with basil leaves when served. If you are in a hurry, you can buy the pumpkin already chopped or already blended even though the fresh one is definitely better. If you can't find a pumpkin, you can use butternut squash instead.
